Ingredients
- 1 cup sugar
- 3/4 cup shortening
- 2 eggs
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt

Instructions
- Beat sugar and shortening for a couple minutes. Add eggs and vanilla and continue to beat. Add the rest of the ingredients and refrigerate at least one hour (I like to refrigerate overnight when possible). Preheat oven to 375 degrees. Roll out to about 1/4 inch thickness (or slightly less) and bake 6-8 minutes. You don't want them brown - they are suppose to stay light.
